Green Banana Muffins

Today on the blog I am sharing Kristin Cavallari's recipe for Green Banana Muffins!  They are bomb!!  And if you read my last post you know I absolutely love K Cav.  So much so, we're on a nickname basis.  Lol.  I plan to share some of my fave recipes from both of her books...stay tuned for more! 

Today's recipe is from her first book Balancing in Heels.  It's a favorite read with great tips + advice + stories + plenty of pics.  And recipes!!  The Green Banana muffins are by far my favorite!  Easy & healthy!  And green from..... SPINACH.  Yum.  

She's a total babe & her shoe game is fiiiire.  And honestly I'd eat whatever she's eating because her body is INSANE.  #goals  Get the book!!  Or you can borrow it.  I'm happy to share!  But for now, I'll just share this one recipe....

THE RECIPE

2 cups spelt flour (although she has said oat flour is better!)

2 tsp baking powder

1/2 tsp baking soda

1 tsp fine grain sea salt

6 oz or 4 cups baby spinach

3/4 cup real maple syrup

1/2 cup plain unsweetened almond milk

1 flax egg (or real egg)

1/4 cup applesauce

1 1/2 tsp vanilla extract

1 1/2 cups mashed banana (about 2 large bananas)

+

A blender

Muffin pan(s)

Muffin cups

****I didn't follow the recipe perfectly....I was making them for my family so I had to work with what my mama had in her kitchen!  So I used regular flour & a real egg.  Maybe that's why mine turned out bright green...****

Once you have the ingredients the rest is easy!  

Preheat oven to 350 degrees + line muffin pan with muffin cups

In a large bowl, sift together flour + baking powder + baking soda + salt

In a blender, combine spinach + maple syrup + almond milk + egg + applesauce + vanilla -- process until pureed

Add wet & dry ingredients + mashed banana & stir until well combined

Fill each muffin cup 3/4 full

Bake for 20 - 25 minutes

& then ENJOY!!

How easy is that!?  That's one of the reasons I love making them.  Also because they don't take very long to make which is great and when you're done you have breakfast or snacks for quite a few days!  But the main reason is they are a creative (& tasty) way to get some greens into your day!  I'm a big fan of cooked spinach but I don't think I ever get enough greens so adding some fresh spinach to muffins is perfect.  

I will admit my boyfriend & my big brother are not huge fans of these muffins.  LOL.  In response to their distaste I said warm it up & spread butter on top & I guarantee you actually like it!!  Let's just say the butter helped....because who doesn't love a warm buttery muffin?! 

I'm thankful for Kristin Cavallari sharing this recipe in her book!!  Definitely a go to of mine now.  And I can't wait to try & share recipes from her newest book True Roots!!!
