Turkey Taco Salad
I did a little Trader Joe’s shopping today which is one of my favorite things to do. Not only do I love their groceries but they have been the cleanest & safest place to shop during COVID-19.
I just made this Turkey Taco Salad for dinner tonight & thought I’d share the recipe with ya’ll. It’s super easy + healthy + quick + tastes amazing.
THE RECIPE
+ Ground turkey
+ White onion
+ Taco seasoning
+ Romaine
+ Black beans
+ Shredded cheese
+ Pico
+ Trader Joe’s Green Goddess salad dressing
In that order…
The recipe is super simple & straightforward. The items I listed are used in that order & combined in the end for a yummy taco salad. I used these Trader Joe’s items along with their ground turkey + a white onion + romaine lettuce + Green Goddess dressing.
HOW TO
Heat the white onion in a skillet with olive oil & add the ground turkey.
Cook for 15 minutes & then add the taco seasoning.
While this is cooking heat the black beans on the stovetop.
Once these are cooked…
First add the romaine lettuce to a bowl.
Next add a layer of black beans followed by the ground turkey.
Then top with shredded cheese + pico + Green Goddess dressing.
Add as much of the Green Goddess salad dressing as you’d like on top & enjoy!
TIPS
I like to use ground turkey because it’s a leaner meat but it tastes great with any protein. You can add ground beef, shredded chicken, shrimp, etc.
I use mainly Pico as the salad dressing on this. I add a TINY bit of Green Goddess dressing. It tastes very fresh & healthy with the pico as the dressing. I use Hot which adds spice to it as well.
This makes great leftovers but keep the beans & meat separate from the lettuce & re-make the cold salad the next day.
